Rice Usili

Ingredients
Rice Usili, Rice Usili cuisine, Rice Usili Recipe, Rice Usili South India cuisine, Rice Usili Dishes of Tamilnadu
  • Rice 1 cup
  • Moong dal(yellow) 1/4 cup
  • Potatoes 1
  • Brinjal 2
  • Onion 1
  • Green Peas 1/4 cup
  • Carrot 1
  • Green chilies 4
  • Coconut grated 1/4 cup
  • Oil, mustard seeds, urad dal & curry leaves for seasoning.
  • Coriander leaves for garnishing.
  • Salt to taste

Method

  • Dice potatoes and carrot.
  • Cut brinjal and onions into lengthy slices.
  • Slit green chilies.
  • Fry moong dal in a dry pan and keep aside.
  • Add oil and allow mustard seeds to splutter.
  • Then add urad dal and fry.
  • Add curry leaves and green chilies.
  • Add onions and fry till tender.
  • Add other vegetables and fry for 10 minutes.
  • Add grated coconut.
  • In a pressure cooker or rice cooker, pour 4 cups water, add rice, moong dal and fried vegetables.
  • Add salt for taste.
  • Allow it to cook and garnish with coriander leaves.
  • Serve hot with sambar and pappad.
