Oil, mustard seeds, urad dal & curry leaves for seasoning.

Coriander leaves for garnishing.

Method

Dice potatoes and carrot.

Cut brinjal and onions into lengthy slices.

Slit green chilies.

Fry moong dal in a dry pan and keep aside.

Add oil and allow mustard seeds to splutter.

Then add urad dal and fry.

Add curry leaves and green chilies.

Add onions and fry till tender.

Add other vegetables and fry for 10 minutes.

Add grated coconut.

In a pressure cooker or rice cooker, pour 4 cups water, add rice, moong dal and fried
vegetables.

Add salt for taste.

Allow it to cook and garnish with coriander
leaves.

Serve hot with sambar and pappad.
